When in jack mode my 2022 GLC Overland, the scissor jack will extend all the way without the tire leaving the ground. Couldn’t get a straight answer from my dealer with the problem. Any suggestions.

It's been a while since I've read the manual. Does jack mode place the vehicle is a specified height or does it simply maintain current height setting? If it maintains height, then try lowering your vehicle and then turning on the jack mode. Just a guess.
I believe you have to go into the Uconnect system and turn off the air suspension. Otherwise, your tires will continue to drop as you raise it. When I get in my car later I can take a look, but I believe it will be in settings where the easy entry exit setting is
