I used it constantly in my 2015 Cherokee because that transmission totally sucked and this mostly fixed it.
I've used it some in the GLC but I clearly see that this vehicle is much better in auto than the 2015 was, so I don't really need to use it too much.

Kick straight in and straight back, don't move your leg super fast but it also doesn't need to be slow. No swinging left or right. Works every time for me.

I notice the exact same thing. Most of the time it works pretty well. But sometimes it bounces back and forth. I tell myself that if a cop noticed it I would almost certainly be pulled over because they would think that I'm drunk.
I don't think you can. I hate the feature and wish I could permanently disable it as well. Lane assist, parking sensors, and other stuff can all be disabled permanently
I figure Jeep doesn't allow start/stop to be disabled permanently because the feature, when used normally, probably allows...
From page 129 in the manual,
"The shift paddles (if equipped) may be disabled (or
re-enabled, as desired) using the Uconnect
Personal Settings."
I think I once spotted it in uconnect but I'm not sure where. I'll try looking again tomorrow.
